Engagement Photo Session { Westerly, Rhode Island } Toby & Lisa



























I've known Toby & Lisa for a while now.  Toby and I were in a rock and roll band together that did quite well, traveling all over the Northeast to play in some pretty cool places.  And through that I also got to know his girlfriend, Lisa.  His girlfriend of 17 years.  No, that's not a typo.  I actually said seventeen years. 17.  I know.
Well they finally got engaged and she immediately asked us to take their engagement photos and we were totally honored to do so!  We went out to where they live in Westerly, Rhode Island and hit the park, the beach and even downtown.  They are two really wonderful people that totally get each other, have patience with each other, know when to push and when to pull.  They made it 17 years as a couple because they know it's forever.  Congratulations lovebirds!

I love everything about these.  She is my one of my favorite people to photograph.  She is so much fun to be around.  She's a great mom and an amazing soul.  She is training to be a Yoga Instructor and I'm pretty sure one day she will open a school.  She is one of the most fun models to work with and she is one of best friends.

The Best Guacamole Recipe Ever { taco tuesday }

I think we make the best guacamole ever and I am going to tell you how we make it.
It's soo soo good and fresh and makes your body feel good.
This recipe makes enough for the two of us but if we are having company we double it
for 2-3 more people and then triple it for 4-6 more people, etc.
I don't recommend making too big of a batch at one same time.

Here is our recipe:

Cut an avocado in half and scoop it into your favorite bowl.



 Squeeze half of a fresh lime and pour it over the avocado.


 

Dice half of a medium red onion (or white) and add it to the bowl.
You see the one up above. Yeah, I didn't take pictures of this step.
Don't be like me.
De-seed and then dice one jalapeno and throw that in too.  It's ok, it won't be too spicy.  
Unless you're wimpy with medium salsa, you should be fine.

 


 


 


 Next, cut up a nice handful of fresh cilantro until it's nice and fine and add it to the bowl!

 


 




Then finely chop 2 cloves of garlic and add them to the bowl.



 


 Add a pinch of kosher salt and a good amount of fresh black pepper. 


                 



Now here is where our recipe might vary and one of the reasons that I think it's so good.
Don't add the tomato yet. 
Mix all of that up really well by holding two spoons and smushing, chopping, stirring.
IF you really want to get crazy, and we do sometimes, use a hand-held immersion blender to mix all of that up and you will get smooth, creamy, awesomely mixed guacamole.
         
Either way, once it's nice and mixed, cut a tomato in half and get all the juice and seeds out of both halves.  Then dice the entire tomato up into nice little chunks and add it to the bowl.

 


 





 By stirring in the de-juiced tomato last your guacamole will just taste better.  I could wax poetic about why but right now I really need to go make some guacamole. 


 







 Taco Tuesdays are the best with a big bowl of homemade guacamole!
